  9. Prepare 2 of green peppers,cut into 2 inch chunks.
  10. You need 1 of pilaf or rice.
  11. You need 1 of lemon wedges.
  12. You need 1 of u cau use any kind of meat.if u dont care for lamb.2-3 lbs cut into 11/4 cubes..

  1. Light the grill 1 hour before cooking.
  2. 2 hours before, put lamb in large bowl..
  3. add minced onion, pepper,oregano and oil and mix well, cover and refrigerate..
  4. before cooking ,on metal skewers,alternate lamb cubes, onion, tomatoes, mushrooms and the peppers, leaving 1/4 inch between each piece..
  5. brush vegetables with oil lightly,.
  6. then grill 5 inches above hot coals for 10 to 15 minutes, just until center of lamb is still a little pink. turn frequently..
  7. brush all pieces with enough oil to keep moist while cooking..
  8. using a fork, push shish kabob off skewer onto a serving dish..
  9. serve over pilaf or rice..
  10. Garnish w/ lemon wedges..
